Envelopes with apples are made from tender cottage cheese dough, which is very easy to knead and does not stick to your hands. Sculpting cookies from it is not labor, but a real pleasure that even small children can handle. Therefore, be sure to call all family members to speed up the process and have fun together.

After a short baking, soft crumbly envelopes with a rich curd flavor are obtained, inside of which a juicy filling of fragrant sweet and sour baked apples is hidden. How to cook cottage cheese envelopes with apples - a recipe for cottage cheese dough cookies with step by step photos

INGREDIENTS:

  • 400 g cottage cheese 5 - 9%
  • 200 g softened butter
  • 325 g flour
  • 150 g sugar
  • 1 pack vanilla sugar
  • 1 pack baking powder
  • orange peel
  • a pinch of salt
  • 2 medium sweet and sour apples (300 g)
  • 1 - 2 tbsp. l. brown sugar
  • 1/2 tsp cinnamon as desired

COOKING METHOD:

1. To prepare envelopes with apples from cottage cheese dough, put softened butter, sugar and vanilla sugar into a deep bowl or bowl of a food processor. Beat butter and sugar into a smooth creamy mass.

2. Add cottage cheese and zest of one small orange and mix everything again. If the cottage cheese is with grains, it should first be rubbed through a sieve.

3. In 2 - 3 doses, pour in the flour sifted with salt and baking powder, and knead the dough with your hands or using the "hook" nozzle.

4. The result should be a very thick, dense dough that does not stick to your hands at all.

5. Roll out the curd dough on a floured surface into a rectangular layer 4-5 mm thick and cut it into squares with a side of 8-9 mm.

6. Place 2-3 apple slices in the center of each square and sprinkle with regular or more flavorful brown sugar. You can also sprinkle them with additional cinnamon for a spicy taste and aroma. Connect the opposite ends of the dough and close up the products in the form of envelopes with filling inside.
7. Put the curd envelopes with apples on a baking sheet covered with parchment or a silicone mat. You can put them quite close to each other, as they do not increase in size during baking. From this amount of ingredients, I got 28 cookies on two large baking sheets.

8. Bake in an oven preheated to 180 ° C for 25 minutes until browned.


These tender cookies can be eaten both warm and cold, washed down with tea, coffee, juice or milk. Juicy and fragrant envelopes with apples from curd dough are ready!

Cottage cheese 150 grams
Sugar 75 grams
Egg 1 piece
Salt pinch
Flour 250 grams
Vanillin 1 sachet
Vegetable oil 6 tbsp. spoons
baking powder 1 sachet

For filling:
Apples 3 piece
Sugar 100 grams
Cinnamon 1 teaspoon
For powder:
Poppy 1 tbsp. the spoon

Cooking method:
Step
1. Dough. Mix cottage cheese with sugar, add egg, salt, vegetable
butter, vanillin, flour mixed with baking powder. Knead the dough, cover
kitchen towel and leave for 20 minutes.

Step 2: Next
divide the dough into two parts. Roll out one part of the dough into a circle with a diameter
24 cm and about 5 mm thick. Cut it into 8 sectors. On each
triangle make three cuts. Lay slices along the wide edge
apples, sprinkle with cinnamon sugar.

Step 3. Wrap the wide side with the narrow end of the triangle, bending the corner under the bottom of the envelope.

Step 4. Put the blanks on a baking sheet and grease them with a mixture: 1 yolk + 1 tbsp. l. milk, sprinkle with poppy seeds.

Step 5. Bake in a preheated oven at t-180 ° C, for about 25 minutes, until a beautiful golden color.

Mix all the ingredients for the dough in a bowl, chop with a knife, and then mix everything very quickly with your hands. You should get a homogeneous, completely non-sticky dough.
Roll the finished mass into a ball, wrap in cling film and refrigerate for one hour.
Try to work with the dough very quickly so that the butter does not have time to melt.

Step 2: form envelopes with apples.



Rinse the apples, peel, remove the core with seeds and twigs. Divide the peeled fruit into quarters or cut into six parts, depending on the size of the apples.
Take the dough out of the refrigerator, pinch off a piece and roll it into a thin layer. Divide the dough into rectangles with sides 8×8 centimeters.
Arrange the apple slices on the dough rectangles. Sprinkle fruit with a little sugar.
Pull two opposite corners of the rectangle towards each other. Fasten them. Then pull and connect the remaining corners to make an envelope with a piece of apple sealed inside. Small gaps should remain on the sides of the envelope.

Step 3: bake envelopes with apples.



Place the folded envelopes on a baking sheet lined with parchment paper. And send everything to the warmed up 200 degrees oven on 30 minutes. The dough should be well browned.

Step 4: cover the envelopes with apples with icing.



While the envelopes are baking, prepare the frosting. To do this, pour the icing sugar into a deep bowl, and then gradually add warm boiled water to it by a teaspoon. Stir well after each serving of water. Thin the icing until it becomes a smooth, runny mass (not too watery).
Spread icing sugar over the warm apple envelopes, then let the cookies cool.

And apples can be chosen to your taste, but not very sour. Otherwise, you will have to add more sugar to the baking, which is not particularly suitable for this case.
