Why do I call these pancakes crepes? Because it is for French pancakes (crepes) that melted butter and a fairly large number of eggs are added to the dough with milk. Still, crepes are very different in taste from standard pancakes - they are softer, softer, more elastic and high-calorie, of course. But it's so delicious that crosses out all non-diet moments.

So, for chocolate crepes, I use chocolate, and not its common substitute in cooking - cocoa. Although a little cocoa is still added to the dough, it is chocolate that gives the main chocolate note. But which one to take, it's your choice. I like to use dark chocolate, at least over 70%. But if you do not like dark chocolate, then take the usual black or even milk chocolate. The main thing is that the chocolate bar does not contain any impurities (nuts, dried fruits, etc.).

For the test, we will definitely need melted butter, which is why I indicated the amount of butter needed in spoons in the list of necessary ingredients (because already melted butter was measured). But when I began to make such pancakes often, I already took butter in a piece on the basis that 1 tablespoon of melted butter is about 20 g of lump butter.

Another nuance in the list of ingredients is the presence of powdered sugar instead of granulated sugar. This is not the most fundamental question. But still, with the use of powdered sugar, the dough is more homogeneous.
This, perhaps, is all the subtleties of choosing products for a sacred action. Let's get started.


First we need to melt the butter. But since we still need to melt the chocolate, I propose to combine these two processes into one. So, in a separate small bowl, put the butter cut into cubes. We also break chocolate into random pieces. Then you can melt in your favorite way.

It is best, of course, to use a water bath. But since I’m always in a hurry somewhere and don’t have time for anything, I always melt in the microwave. I just put a bowl of butter and chocolate in the microwave, set the average power and turn it on for 2-3 minutes. After that, I stir the mass and, if necessary, heat it up a little more.

Temporarily I set aside chocolate with butter. Again, I heat up half of the milk in the microwave (that is, 250 ml), you do not need to boil it, the main thing is to bring it to the temperature of the chocolate-butter mass. I pour warm milk into melted chocolate with butter, mix and leave it alone for a while.


While the chocolate mass is cooling, I combine all the dry ingredients of the recipe: flour, powdered sugar, salt and cocoa. I mix. Note that I don't use baking powder or baking soda at all because the crepe dough is already very rich.


It remains to prepare the eggs. To prepare crepes, eggs need to be beaten. But not white, but just a little. For these purposes, a mixer or blender is perfect. But a regular whisk will do the job just fine.

Pour the beaten eggs into the dry ingredients and mix gently. Pour the remaining cold milk there. And we introduce the chocolate-milk-butter mixture into the dough. Mix the dough well.

At first glance, it may seem to you that the dough is very liquid even for pancakes. Let this moment not bother you. This test must be allowed to stand. Preferably two hours. But if there is no time, then one hour will be enough. During this time, the chocolate and butter will thicken the dough a bit.

Over time, mix the dough for pancakes. If you notice that there are some lumps, then it is better to break them up. Or strain the finished dough through a very fine sieve. To tell the truth, I have never done this before, yet we cook for our family, and not for a culinary competition.

Sometimes it happens that some pieces of chocolate have not dissolved (or have already thickened so much that they have formed small lumps). Let it not scare you. You can carefully knead the dough with a spoon until smooth. And you can leave pieces of soft chocolate, they will be like a kind of sweet pripeka for pancakes.

Just before cooking, I add a couple of tablespoons of vegetable oil to the dough. This is necessary so that you do not have to lubricate the pan during cooking. And the pancakes won't burn.


It's time to bake pancakes. It is necessary to heat the pan and lightly grease with vegetable oil before the first pancake (I try to do this with a silicone brush). Now pour a little dough into the pan with a ladle, distribute it in a circular motion over the entire surface of the pan and bake the pancake on one side until the edges begin to dry out a little. Then carefully flip the pancake over to the other side. We bake half the time than on the first side. I usually move the pan slightly: if the pancake has started to ride on it, then it’s definitely time to take it off.

I must say that, of course, it is very convenient to bake pancakes in a pancake pan, because it has practically no sides. Do you know that the dry edges of pancakes are obtained from the fact that we involuntarily pour the dough on the sides of a frying pan that is not suitable for this? This is where they dry up. If you begin to pour the dough carefully, in the middle of the pan, then the edges will not be dry.

In any case, we stack the finished pancakes in a pile, and then there are two options (you can use both at once): either grease the edges of each pancake with butter, or cover the pancakes on top with a plate so that the pancakes do not dry out.

About twenty pancakes of a fairly large diameter come out of this amount of dough. I'm sure the family will ask for more. Therefore, I immediately suggest: bake, if not a double portion, then at least increase all the ingredients by one and a half times.

Pancakes are very interesting - black, unusual, but very, very tasty! They can be served with a sauce (it would be nice if it was a little sour - cranberry, cherry or orange), you can make sweet rolls with banana or cottage cheese from them.
