Pancakes on kefir with holes - recipes for thin, tasty, delicate pancakes. Pancakes on kefir with holes - recipes for thin, tasty, openwork pancakes We bake pancakes according to the recipe

Do you know what is the beauty of thick pancakes cooked on kefir? In their amazingly lush, soft, velvety texture. Eat one such ruddy pancake - and you are already full. And if you pour it with honey, condensed milk or something else no less tasty, you will already get a full breakfast.

Expired kefir is best for making fluffy pancakes. It is more acidic than fresh, and therefore, when soda is added (it is used in the vast majority of recipes), a stronger and more stable reaction occurs. Therefore, baking comes out porous, soft, airy, with neat holes.

Such pancakes are baked from a thick dough, so they turn out thick. Do not be surprised at the unusual ratio of flour and liquid - there is no mistake here. If kefir is over, it is quite acceptable to replace it with another fermented milk product that is similar in texture and taste. Sour milk, whey, plain drinking yogurt, buttermilk, etc. will do.

Mix kefir with soda - you get very lush thick pancakes with holes

What you need for cooking (glass - 250 cc):

  • kefir (any fat content) - 500 ml;
  • wheat flour (highest grade) - 2 cups;
  • chicken eggs (selective category) - 2 pcs.;
  • granulated sugar - 2 tsp. (maybe a little more, to taste);
  • baking soda - 1 tsp (without top);
  • table salt - 0.5 tsp;

Thoroughly stir the dough until a homogeneous, thick consistency. It will turn out quite thick and lush due to the interaction of soda and kefir. Pancakes will come out of it thick, when baking, they will rise well, covered with small holes. Let the dough stand for 10-15 minutes, and then start baking.
  4. Heat the pan well, grease it with a thin layer of oil or a piece of unsalted lard. Pour in a portion of the batter and spread it evenly over the bottom, slowly turning and tilting the pan. Bake the pancake over low heat, it should have time to bake through the entire thickness.
  5. When a lot of holes appear on the surface of the pancake, turn it over to the other side. Bake for 1-2 more minutes. Put the finished pancakes on a plate in a pile and, if desired, grease with a piece of butter while they are still hot.

  • kefir - 1 l;
  • flour - 4 cups;
  • granulated sugar - 4-6 tbsp. l.;

Lush pancakes on kefir without yeast, with boiling water - it doesn’t get easier and tastier

What to take:

  • kefir (any freshness and fat content) - 500 ml;
  • chicken egg (large) - 1 pc.;
  • granulated sugar - 1.5 tbsp. l.;
  • table salt, finely ground - at the tip of a teaspoon;
  • soda - 1 tsp (no slide, slightly incomplete);
  • drinking water - 300 ml;
  • sunflower oil, odorless - 1 tbsp. l. (in the dough) + 2 tbsp. l. (for baking pancakes);
  • unsalted butter - 50 g (for greasing ready-made pancakes).

Step by step cooking instructions:

  1. Crack the egg into a small heat-resistant container - a saucepan or stewpan. Add a pinch of salt and some sugar. Whisk lightly with a whisk or fork. Add kefir and put on low heat. This mixture must be heated to about 45-50 degrees. You don’t need to heat it up more strongly - the egg white will curl up, and the kefir will delaminate into cottage cheese and whey. During heating, the kefir-egg mixture must be constantly stirred so that the sugar disperses through the liquid, and it heats up evenly, throughout the entire thickness.
  2. By the way, instead of kefir in this recipe, you can use homemade yogurt (sour milk) or whey, adjusting the amount of flour (if necessary), depending on the density of the fermented milk product.

  3. It is convenient to knead the dough in a deep bowl. Sift 2 cups of flour there (add the remaining amount later, if necessary). Pour warmed kefir to the flour, make the dough with a mixer or a whisk (whichever is more convenient for you). The mass should come out very thick, the whisk should literally stand in it. If the dough turned out to be watery, add the remaining 0.5 cups of flour. Keep in mind that boiling water will still be added to the dough, that is, in the end it will become noticeably thinner. At this stage, the mass should be like very fat homemade sour cream.
  4. In parallel with heating kefir, put a kettle on the stove, boil water. Pour a spoonful of soda into a mug and pour boiling water over it, mix quickly. The soda will extinguish in hot water.
  5. Pour half of the soda solution into the dough, until the boiling water has cooled down, mix. Add the second half of the liquid gradually, bringing the dough to the desired consistency (perhaps all of it will not be needed). The pancake mass should remain thick: the thicker it is, the more magnificent our thick pancakes will turn out.
  6. Pour oil into the dough - 1 tablespoon will be enough.
  7. Lubricate the pan with vegetable fat, heat up. The most beautiful, perforated pancakes are obtained on a cast-iron, heavy skillet. Scoop some of the batter into a ladle and pour into the pan, making sure it is evenly distributed. Bake the pancake on one side for about 2 minutes, over moderate heat.
  8. Flip with a spatula and continue baking until cooked through, about 1 more minute. Transfer the finished pancake to a plate, grease with oil until it cools down. Serve with jam, condensed milk, sour cream, other sweet or savory toppings of your choice.
  9. What you need for cooking:

  • chicken eggs (CO category) - 2 pcs.;
  • kefir (preferably thicker and fatter) - 0.5 l;
  • wheat flour, premium - 220 g;
  • wheat semolina - 180 g;
  • sugar - 3 tbsp. l.;
  • salt, soda - 0.5 tsp each;
  • sunflower oil (without additives and odor) - 8-12 tbsp. l.;
  • butter - a small piece.

Detailed cooking procedure:

  • Stir the mixture well, getting rid of lumps of unmixed flour and semolina. Cover the bowl with cling film and leave warm for 30-40 minutes. During this time, gluten will stand out from the flour, semolina will absorb liquids and become soft. The dough will be thick.
  • Bake pancakes in a well-heated pan, greased with a thin layer of vegetable or melted butter. It should be cooked on low heat so that the middle is well baked, and the top is covered with a golden crust. After frying one side, turn the pancake over and continue cooking it from the second barrel. These magnificent, beautiful pancakes can be served with condensed milk, sour cream, sweet curd mass, or simply sprinkled with powdered sugar before serving.

    Thick fluffy pancakes on kefir with yeast

    A step-by-step recipe for making pancakes with kefir and milk

    For this recipe, kefir and milk must be taken in a ratio of 3: 1. Due to the presence of vegetable oil in the recipe, the pancakes turn over well and do not stick to the pan.

    Ingredients:

    • Kefir - 3 tbsp.
    • Milk - 1 tbsp.
    • Flour - 1.5 tbsp.
    • Sugar - 3 tbsp. l.
    • Eggs - 3 pcs.
    • Soda - 1 tsp
    • Salt - a pinch.
    • Vegetable oil - 2 tbsp. l.

    Cooking process:

    1. Mix eggs with sugar and a pinch of salt and beat with a fork, whisk or mixer until foamy.
    2. Mix kefir at room temperature with beaten eggs and knead thoroughly with a spoon or fork.
    3. After kefir, add soda and mix well. The process of carbon dioxide release will begin, bubbles will form. The alkaline environment has already met with the acidic (kefir) environment, so vinegar is not needed here.
    4. Pour the flour sifted through a sieve in portions, stir, kneading all the small lumps. At this stage, the dough is quite thick, and this is normal, because it will still be diluted with milk.
    5. A glass of milk, slightly heated, pour into the dough and mix everything. If you pour milk gradually, there should be no lumps. If they still remain, use a mixer.
    6. Add two tablespoons of odorless refined vegetable oil to pancake dough and stir.
    7. Heat a frying pan with a whole, undamaged surface well. If your frying pan is in perfect condition, you don't even need to use frying oil, since it is present in the dough. But for the first pancake, it’s better to “butter” the pan a little. Fry pancakes without a lid, turning over as soon as they are browned.

    A simple and delicious recipe for pancakes without adding eggs

    The absence of eggs in this recipe does not affect the quality of the dish. The only difference is that pancakes without eggs are lighter, without a yellow tint.

    Ingredients:

    • Flour - 300 g.
    • Kefir - about 1 liter.
    • Sugar - 3 tbsp. l.
    • Salt - ¼ tsp
    • Soda - 1 tsp
    • Vegetable oil.
    • Cinnamon and vanilla optional.

    Cooking process:

    1. Sift flour into a bowl and mix it with baking soda and sugar. If you are making sweet pancakes, you can put a little more sugar and add a pinch of vanilla and a quarter teaspoon of cinnamon. For unsweetened pancakes, you can not use sugar at all or limit yourself to one spoon.
    2. Heat kefir to a temperature of about 40 degrees and pour it into a mixture of dry products, stirring constantly. It is quite possible to get lump-free dough without the help of a mixer if you patiently mix the components in portions. In case of formation of lumps, take a mixer and beat the mass.
    3. Add vegetable oil to the dough. It will not only give the pancakes the necessary elasticity, but also protect them from sticking to the pan during frying.
    4. Mix well and check the consistency. The recipe is designed for making thin pancakes, so the dough should be quite liquid. Flour can be added for thicker pancakes.
    5. Fry pancakes in a well-heated pan (preferably with a non-stick coating). Fry the first side a little longer so that the dough “grabs” well, literally a minute is enough for the second.
    6. Ready-made pancakes can be greased with butter and folded into a pile, then they will be soft and tender. In general, according to this recipe, a universal product is obtained that can be eaten with any fillings, served instead of bread with soup or meat, lubricated with jams, honey, etc.

    Pancakes on sour (sour) kefir

    This recipe is based on sour kefir, which has stagnated in the refrigerator and had every chance of being thrown away. However, such a product, when used correctly, becomes the key to high-quality delicious pancakes.

    Ingredients:

    • Eggs - 2 pcs.
    • Kefir sour - 0.5 l.
    • Flour - 1 tbsp.
    • Sugar - 2 tbsp. l.
    • Soda - 0.5 tsp
    • Flour - 1 tbsp.
    • Vegetable oil, salt.

    Cooking process:

    1. Warm up sour kefir to a temperature of 40-50 degrees. At the same time, excess carbon dioxide will already begin to be released. After removing the dishes with kefir from the fire, immediately pour soda into it. At the same time, the acid-base environment of kefir comes to an optimal state, its excess acid is leveled.
    2. In a separate bowl, prepare the egg mixture by beating eggs with sugar and salt. If you plan to serve pancakes with a sweet filling, you can add vanillin or other flavors to the eggs.
    3. Mix kefir with eggs and add flour to the mixture in small portions. Knead thoroughly so that the dough is saturated with oxygen, it is homogeneous, without lumps. Both the one and the other version of pancakes will turn out delicious if you correctly adjust the acidity of kefir. Do not be afraid to add soda in the process, if you notice that the dough is sour, just mix it with flour.

    Delicious rice flour pancakes

    Rice flour is characterized by the absence of gluten and a high content of starch, so dishes from it are crispy and brittle. Rice flour pancakes use more eggs to "glue" the ingredients together, otherwise the recipe is the same as wheat flour pancakes.

    Ingredients:

    • Eggs - 4 pcs.
    • Rice flour - 400 g.
    • Kefir - 200 g.
    • Baking powder - 0.5 tsp.
    • Salt - 1 pinch.
    • Sugar - 1-2 tbsp. l.
    • Boiling water - 100 ml.
    • Vegetable oil for frying.

    Cooking process:

    1. Pour baking powder into kefir and mix. You can use the same amount of soda instead of baking powder.
    2. Add eggs beaten with sugar and salt to kefir. The amount of sugar can be varied according to your taste.
    3. Slowly stir rice flour into kefir with eggs. You will get a thick mass. Beat it with a mixer or just a fork, and let it stand for a while.
    4. Boil 100 ml of water and immediately pour boiling water into the dough, stirring it at a fast pace. You can continue to use the mixer at this stage. You will get a dough that looks like liquid sour cream. If this degree of density is not achieved, add the desired ingredients - dry or liquid - depending on the situation.
    5. Preheat a frying pan (it is better to take a special one for pancakes) and sprinkle with vegetable oil. Fry the rice pancakes, flipping to the other side when done. To prevent the dough based on rice flour from unnecessarily showing its fragility, cover the pan with a lid and do not wait for the pancakes to be strongly fried.
    6. Serve rice pancakes well for breakfast and as a dessert at any time of the day. Various jams, chocolate and peanut butters, honey go well with them.

    A recipe that makes a very tender delicacy. The thick dough is filled with bubbles, which form a mass of holes during baking, which makes the pancakes porous and fluffy. They perfectly absorb honey, condensed milk, jam. No wonder it is called the best, believe me, but better check.

    Products are lush due to the interaction of the fermented milk product and soda, but, most importantly, do not use kefir immediately from the refrigerator. It must either be slightly warmed up or kept indoors so that it becomes room temperature.

    Required products:

    • kefir - 0.5 l.
    • sour cream - 2 tbsp. l.
    • eggs - 2 pcs.
    • sugar - 2 tbsp. l.
    • salt - 0.5 tsp
    • soda - 1 tsp
    • butter - 20 gr.
    • vanilla
    • flour - 10 tbsp. tablespoons flour (about 200 gr.)

    We bake pancakes according to the recipe:

    1. Pour kefir into a bowl or saucepan, add salt, sugar, vanilla, mix with a whisk, put on a slow fire to make the mixture warm.
    2. Remove from heat, add eggs, sour cream, vanilla - beat lightly with a whisk. Pour soda into a small bowl, pour some water and put on fire, as soon as the water boils, pour the contents into the kefir mixture and mix well.
    3. Add flour and mix well again so that the dough is homogeneous, without lumps. The dough will already begin to bubble, but for the best effect, you need to hold it a little over boiling water.
    4. To do this, put a pot of water on the fire, as soon as it boils, put a cup of dough on top. The main thing is that the cup does not touch the water, and it is necessary to mix the dough so that it does not boil. Hold for 2-3 minutes over the steam, as soon as the bubbles begin to increase, remove.
    5. Add melted butter and start baking. The consistency of the dough should be thicker than for thin pancakes.
    6. Grease the pan once with vegetable oil, and then bake in a dry frying pan. We collect the dough with a ladle and quickly begin to pour it into a hot pan in a stream, while rotating it so that it evenly spreads over the pan. We bake pancakes on moderate heat. Fry on one side first.
    7. The surface will begin to bubble. As soon as the dough becomes opaque, carefully stretch the spatula under the pancake and turn it over to the other side.
    8. These are such beautiful pancakes. We put them in a pile on a dish, you can grease each with melted butter.

    Delicious and fluffy pancakes on kefir with the addition of starch

    The recipe is interesting not only because I add starch to it, which makes round pastries more elastic. Here, first the yolks are added separately, and then tightly whipped proteins. As a result, pancakes are very tender and tasty.

    Since starch dilutes the gluten of the flour a little, for this recipe, so that the pancakes do not tear when turned over, you need to take strong flour with a high level of gluten. Usually it is flour of the highest and 1st grade.

    Test recipe:

    • kefir - 750 ml.
    • eggs - 3 pcs.
    • flour - 200 gr.
    • starch - 80 gr.
    • soda - 0.5 tsp (with slide)
    • salt - 0.5 tsp
    • sugar - 3 tbsp. l.
    • vegetable oil - 3 tbsp. l.

    All test items must be at room temperature.

    How to bake:

    As I already said, the pancakes are elastic and can be used for stuffing, just take a little less dough and stretch it over the pan, making the cake thinner.

    For quick gluten formation, all liquid ingredients are preferred at room temperature, so prepare them on your work bench ahead of time. Combine sugar, egg and salt in a convenient container.

    Beat the mixture with a whisk or mixer until the salty and sweet crystals are dissolved.

    Pour in kefir and one and a half tablespoons of oil. You will need about ¾ of the amount of lean, leave the rest to lubricate the surface of the pan.

    Add soda and stir liquid mixture.

    Sift the flour thoroughly to remove unwanted inclusions and enrich it with oxygen.

    Mix the mass with a whisk. The dough should be the consistency of sour cream, without lumps. If the dough mixture is liquid, add flour, otherwise the pancakes will rise under the influence of heat, and then quickly fall off.

    Heat up a frying pan and grease with oil or a piece of lard. With a ladle, pour the dough mixture into the middle of the pan without lifting it. The dough will take the prescribed area, you do not need to adjust the shape.

    Pouring the dough for the second or third time, you will learn how to pour it gradually, giving the products a round shape. Cover the pan with the contents and fry over low heat on one side until a relatively dry, porous surface forms. Then turn the tender thick pancake over and fry the second side until done.

    Lay the pancakes out on a platter. Serve with your favorite drinks and sweets. Enjoy your meal!
